Cooked where you eat

We bring our own fire.

Everything is cooked on site. The dishes that suffer from sitting are the ones finished last, and nothing goes into a hot box to wait out a speech. That is the difference between food that tastes like a restaurant and food that tastes like it waited two hours.

Before service we walk the room, so the food travels the shortest possible distance to the furthest table. It is not glamorous. It is why the short rib gets texted about.

The kitchen is whatever is behind the barn, the power is an extension lead somebody ran that morning, and a hundred and forty people sit down at the same moment. Planning for that is most of the job.

From date to dinner

Three steps, start to finish.

You can stop after any of them.

  1. Send the date and the headcount

    And roughly what you had in mind. A menu and a price come back in writing — the dishes themselves get written closer to your date, around what the market is doing that week.

  2. Taste it before you sign

    Sit down and eat the menu before you commit to it. The tasting is $75, credited toward your booking — hire us, and it cost you nothing.

  3. We cook, you sit

    On the day the kitchen arrives, sets up out of sight and cooks where you eat. If the bar is running it is stocked and staffed alongside, priced to your evening.

Effortless is the whole brief. If the room can tell how the food got there, something has gone wrong.

Bar service

We can run the bar too.

Quoted to your event rather than priced per head — send the headcount and how long you need it open, and we will put a number to it. It is stocked and staffed alongside the kitchen, so it is one crew and one invoice.
